parmesan potatoes

File this one under- will make again and again. Crispy and different enough to be interesting but safe and not too over powering to be a great compliment to any meal. Top that off with the fact that this recipe is really easy, then it'll be made on a daily basis.
Set one- melted butter with salt and pepper.
Step two- lots and lots of parmesan cheese.
Step three- halved potatoes smooshed into the cheese and butter.
Step four- bake in the oven for 40 minutes. I know it looks kind of burnt, but the cheese under the taters will be perfect. See? I told you so!
Parmesan Potatoes

2 medium russet potatoes
4 Tablespoons of melted butter
1/2 cup grated parmesan cheese
Salt and pepper

Preheat oven to 400 degrees. Pour melted butter into a shallow baking dish and sprinkle with salt and pepper. Top melted butter with grated parmesan. Slice each potato down the center and press into the butter and cheese. Cook potatoes in the preheated oven for 40 minutes. A done potato is 210 degrees inside. Serve hot and enjoy!
