how-to roast garlic

Hello! Time for another how-to post. This is for roasted garlic- one of my favorite things in the whole big wide world. LOVE roasted garlic. The first step is to slice off the top of the garlic and expose each clove.
Dress the garlic with olive oil, salt and pepper. Place into a preheated 350 degree oven on the bottom rack for 20-25 minutes. The garlic should be mushy on the sides to touch.
Ahhhh. Let the garlic cool on the counter or flash cool in the fridge before handling. Squeezing the head should push each clove out, but be prepared to get a little messy. Save any unused garlic in a airtight container in the fridge.
My roasted garlic never makes it past the first week, but I wouldn't advise leaving the garlic past 3-4 weeks, even in the fridge.
