CHEAP MEAL! CHEAP MEAL! CHEAP MEAL! That was a warning. Your next warning is that this is soooo good. On top of being cheap, this is yummy and takes only a little effort. I mean, really. That hardest part of this meal is peeling the potatoes.
You can substitute things like hot dogs or ham very easily in this meal, but why would you want to? Smoked sausage is so good! After cutting the sausage into rounds, saute in for a few minutes to brown them. Just for extra flavor.
Boil the potatoes until just soft. You don't need them to be smooshy, but soft and cooked.
Mix together in a casserole dish along with the raw onion. Now it's just begging for cheese.
Prepare the cheese sauce! All you need is flour, milk, salt, pepper and butter. Let it thicken until it coats the back of your whisk or spoon like the one above. And then...
Add the cheese! This is important! Use Velveeta! Just trust me on this one. These are Velveeta shreds you see above, and it melts so nicely.
Pour the cheese sauce over the casserole, but you don't need to mix. No need.
Of course, you need more cheese and a little bit of paprika and pop into the oven. You'll love what comes out.
As you spoon it out, the cheese has coated everything inside and made it delicious and dreamy. You.Will.Love.It!
Cheese, Potato and Sausage Casserole
1 lb potatoes, peeled and boiled
4 Tablespoons butter
4 Tablespoons flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb Velveeta cheese, shredded
1/4 cup cheddar cheese, shredded
1 lb smoked sausage, sliced
1/2 cup raw onion, diced
1/8 teaspoon paprika
Preheat oven to 350 degrees. Cook sliced sausage on the stove over medium heat until browned and slightly cooked. Mix cooked sausage and potatoes together along with raw onion in a baking dish. In a small saucepan, combine together milk, butter and flour over medium heat until it forms a sa
