This is comfort food 101. Ham and green bean soup was one of my favorite meals when I was a kid, and this is essentially the same thing, minus all the broth. Big chunks of ham, fresh and sweet green beans with savory and soft potatoes are such a hearty meal. Not to mention the leftovers for days.
This is the cast of the show- only thing missing is the chicken stock and ham base, which is something you can get in the stock and broth section of the grocery.
Season as you go, with salt and pepper as you layer the ingredients.
Thoroughly washed green beans are the next layer. Sliced in half and ready to go!
Of course, onions. Love onions. Big, big chunks of onions.

Seasoned with salt, pepper and the ham base. Mix together, pour about 2 cups of chicken or vegetable stock over the top and cook on low in the crock pot for 6-8 hours.
Tada! The wait is worth it! The potatoes are soft, the onions are sooo cooked they've almost dissolved into the green beans... the ham. Oh, the ham. Salty and sweet, savory and ready to be devoured!
Crock Pot Ham and Green Beans
2 lbs ham, cubed
1 lb green beans, cleaned and sliced in half
5 Idaho potatoes, cleaned and cubed
1 package ham base
2 cups vegetable or chicken stock
Salt and Pepper
Combine together all ingredients in the crock pot. Stir to combine. Cook on low for 6-8 hours until all ingredients are tender. Enjoy!
