pizza quesadillas

We love pizza and we love Mexican food. We also love pizza rolls in this house, and this is a cross between all three. They even take less time to make than a pizza roll which has to cook in the oven for several minutes. These become melty and delicious in no time at all.
Like all delicious meals, this starts with cheese. Except, unlike most Mexican food, this uses mozzarella cheese. Self grated always melts better than the packaged stuff, but that's up to you!
When I make quesadillas, I like to just load up the stuffing on one side and fold the other side over- that way when you flip them, there are less spaces for the filling to slide out. Just cheese, pepperoni and then cheese.
Fold and grill, then...
Flip! Serve with marinara sauce and parmesan cheese.
Pizza Quesadillas
4 flour tortillas
1 package pepperoni slices
4 oz. grated mozzarella cheese
Marinara sauce
Parmesan cheese

In a large saute pan or on a griddle, heat over medium and coat with cooking spray. Place flour tortilla in pan and add a layer of cheese, then pepperoni and then another layer of cheese on one half of the tortilla. Fold over the other half and allow to melt for 1 minute. Flip tortilla and melt and toast on the other side for about an additional minute. Remove from heat and slice. Repeat with the other 3 tortillas. Serve with paremesan cheese and marinara sauce and enjoy!
