spicy baked carrots

Love a carrot. Love any vegetable, but I love carrots. They are so sweet when you cook them, that you can add all kinds of spicy or salty flavors to them and they mellow each other out. These carrots are baked with olive oil, garlic and red pepper flake and they are awesome.
You can use baby carrots, julienned whole carrots, or like I did with sliced carrots. Lay them out on a baking sheet and get ready to season them up.
 Lots of garlic, lots of red pepper flake, lots of salt and black pepper. Drizzle the olive oil over the top, mix them around and pop the whole pan into the oven.
This is what is going on in my house while I'm trying to cook. Radar always wants to play with a toy, and at the exact moment, Nora wants to play with it too.
Pandemonium ensues. And the noise level in our house instantly goes up.
And here we are! About 20 minutes later, the carrots are softened- not too much, so they are still crunchy- and the garlic is fragrant and the red pepper flake is nice and spicy. These are the perfect side dish to ANY meal. And we eat them a lot.
Spicy Baked Carrots
1 lb. sliced carrots
3 Tablespoons olive oil
3 cloves garlic, minced
2 teaspoons red pepper flake
1 teaspoon black pepper
1 teaspoon salt

Preheat oven to 400 degrees. Toss carrots in olive oil, garlic, red pepper flake, black pepper and salt. Place in preheated oven and bake for 20-25 minutes, turning occasionally to brown all sides. Serve hot and enjoy!
