crock pot salsa chicken

Who doesn't love a meal made in the crock pot? Slow cooking is the best... set it and forget it! Well, not completely forget it, because then it over cooks, but you get what I mean.
This recipe is really just doctored up salsa and chicken that is slow cooked all day long. I used tequila lime salsa and chipotle peppers in adobo sauce for the salsa, but you can use whatever peppers and salsa you would like. Mild, medium, hot, black bean, mango, whatever.
Dump it all in on top of some chicken tenders or breasts that are thawed (or frozen) and cook for 4 hours. Mine cooked for 6.
Presto, chango! Look at that. A chicken salsa good pot that I will be scrubbing later! That's the only downside to crock pots :)
Crock Pot Salsa Chicken
1 jar salsa
1 bunch cilantro, minced
3 cloves garlic, minced
1 chipotle in adobo, minced
1 lb boneless, skinless chicken breast or tenders
Juice of 1 lime

In a mixing bowl, stir together salsa, cilantro, garlic, chipotles and lime juice. Place raw, dethawed chicken in the crock pot on low heat. Cover with salsa mixture. Cook on low in crock pot for 4-6 hours. Enjoy!
