buffalo chicken grilled cheese

I love buffalo chicken. I mean, I really love it. I want it at my wedding. Buffalo chicken wings at the wedding. Very classy. This is a little bit more of a classed up version- boiled chicken, cheese and buffalo sauce wedged between two toasted slices of bread. Delish.
Use boiled chicken for this. It's easier to shred.
Use basic chicken wing accouterments to make this- celery, carrots and onions. Slice them and dice them small enough that when you mix it in with the chicken, nothing is too chunky.
I added buffalo sauce and ranch dressing to mix this up. Yum.
Then, butter them buns.
This is sincerely, the hardest part of making the sandwich. Flipping the bread over and not spilling all the guts all over the pan.
Oh god. It's almost ready. Just a few more minutes.
Buffalo Chicken Grilled Cheese

6 slices wheat bread
Butter for spreading
1 lb boiled chicken, shredded
1/4 buffalo sauce
1/4 cup ranch dressing
1/4 cup carrots, shredded
1/4 cup onion, diced
1/4 cup celery, sliced
1/4 cup bleu cheese, crumbled
1/4 cup shredded cheddar cheese

Mix together chicken, carrots, onion, celery, ranch and buffalo sauce together in a small bowl. Butter one side of each piece of bread. Place a slice of bread onto a hot griddle and layer with chicken mixture, bleu cheese, cheddar cheese and bread, butter side up. Grill for 1-2 minutes until toasted and flip. Toast on other side and slice down the middle. Enjoy!
