greek chicken pitas

Easy, easy, lemon squeezy, Greek chicken in a... peety? Pita, pita. Not to be confused with Peeta. Not that you would, but you never know. Anyway, if Peeta made pitas, I bet he would still fill them with this good stuff. Chicken, vegetables and yogurt- how much healthier can you get? Since it was so healthy, I decided to have oven roasted potatoes cooked in oil and spices to go along with it.

Well, like I said, this is so easy. Put your chicken, garlic, spices and onions into the crockpot and walk away for a few hours. It's really almost as simple as that. Seriously, the most complicated thing you have to do is make the Greek salad to go with it.
As many or as little ingredients as you like- we use feta, tomatoes, kalamata olives, pepperoncini peppers, cucumbers and raw onion. Let this mingle together for a while for everything to marry. When your chicken is finished cooking, remove it from your crock pot and let it rest for a minute or two. While the chicken is resting, add the plain yogurt to the onion and liquid in your crockpot.
Yea, it looks icky. But it tastes so good. This will end up being the sauce to incorporate all the flavors in the filling. Now that your chicken has rested, use 2 forks to shred them up.
The chicken looks considerably yummier. Now the time has come to mix everyone together. I do this in the crock pot, because it warms up the cucumber salad, but this is also delicious cold (as Ed can evidence, he has it for lunch).

Greek Chicken Pitas
1 lb boneless, skinless chicken breast
1 large onion, diced
1 tsp lemon pepper
1 clove garlic, minced
1 tsp Cavander's Greek seasoning
1/2 tsp oregano
1 plum tomato, diced
1 cucumber, diced
1/4 cup feta cheese, crumbled
1/8 cup kalamata olives, chopped
2 pepperoncini peppers
4 pitas, warmed
1/4 cup yogurt

In a large crockpot, combine the chicken breast, 1/2 the onion, garlic and seasonings on low for 4 hours. In a mixing bowl, combine the tomato, cucumber, feta cheese, kalamata olives and pepperoncini peppers and allow time to marry flavors. When chicken is finished cooking, remove from crockpot and allow time to rest. Meanwhile, add yogurt to the onion and seasoning mixture in the crockpot. Add the cucumber salad. When the chicken has finished resting, shred using two forks and add to crockpot as well. Fill in warm pitas. Enjoy!
