garlic lime oven corn

So the Parmesan Oven Corn I posted a few weeks ago has been very popular, so I decided to post another variety of oven corn for you folks! This is the one I actually prefer of the two, but this is not for the faint of heart.
The ingredients are simple- one stick of room temperature butter, 2 cloves of garlic minced, juice of 1/2 a lime and the zest as well, and salt and pepper.
Mix those all up together.
So this is where I had a slight panic attack and realized that the only aluminum foil I had left was this tiny little amount. But, both ears fit on the little amount I had left and all was right in the world again.
Health nuts! Avert your eyes! This is a shameful amount of butter! But it is so good. It's only a half stick of butter for each ear. Like, 4 tablespoons each. That's not too much, right? Don't worry, this will cook down and infuse the ears, and everything will be fine.
Roll the little lovelies up, and into the oven they go. 40 minutes later, and this is what's up! Your house will smell amazing, as well. 
Garlic Lime Oven Corn
2 ears corn, husked and de-silked
1 stick butter, room temperature
2 cloves garlic, minced
Juice and Zest of 1/2 lime
Salt and pepper

Preheat oven to 350 degrees. Cream together butter, garlic, lime juice and zest as well as the salt and pepper. Liberally smear the ears of corn with the butter mixture. Roll the ears up in aluminum foil and transfer onto a baking sheet. Bake in preheated oven for 35 to 40 minutes until corn is tender. Enjoy!
