For two sandwiches, I use 1/2 pound of pastrami. This is regular deli sliced pastrami (Boar's Head, actually) that's been very thin- ask your butcher for the meat to be sliced on a 1.
Now, despite the fact that this is not a bacon sandwich, I still want my pastrami to be crispy and delicious just like bacon is. I split the pastrami in half and cooked each quarter pound separately. Press the pastrami into the skillet so that you get some good crustification.
Meanwhile, as the pastrami is crisping, mix up the dressing. This is a combination of equal parts whole grain mustard and mayonnaise, and just a little bit of honey.
Let thing hang out together a while.
Flip that pastrami over! Notice that mine is in a semi circular shape- I use some crusty wheat rolls to eat my sandwich on.

Then topped with the pastrami and lettuce. Ed hates slices of tomato (strange boy), so I left them off.
Now this final step is unnecessary- you can just eat the sandwich as is, but this is just an added bonus. Spray the skillet with some cooking spray and place the sandwich in the pan. Press down nice and hard with your spatula just like you did with the pastrami. Or, you can place a skillet pan on top of the sandwich to smoosh it down.

PLT Sandwiches
1/2 lb thin sliced deli pastrami
2 whole wheat buns
1/4 cup mayonnaise
1/4 cup whole grain mustard
1 teaspoon honey
Lettuce
Tomato, sliced
In a large cast iron skillet, place 1/4 lb pastrami and press with a spatula to crisp up. Flip and repeat on the other side. Meanwhile, combine together mayonnaise, whole grain mustard and honey. Slice buns in half and spread with mayonnaise mustard mixture. Top one half the bun with lettuce and sliced tomato. Place heated and crisped pastrami on the other half. Place the entire composed sandwich back into the skillet, sprayed with cooking spray, and press down with spatula. Flatten and crisp either side of the sandwich and remove. Transfer to a cutting board and let rest for 1 minute. Slice in half and enjoy!
