the best brownies

The are the best brownies for two reasons.
1. They are really easy to make and they only have a few ingredients.
2. They are chewy, soft and amazing.
Whip the butter and sugar, and vanilla in a large bowl until fluffy and light.
Now, add in the eggs one at a time. The picture you see above is one egg in.
Okay, so now you need only 1/2 cup of flour. Yea, that's it.
Annnnnd, only 1/2 cup of cocoa powder. Seriously! Only 1 full cup of dry ingredients in this whole recipe!
Now, I know that this isn't a lot of batter, but you can double up the recipe if you'd like. Although, fair warning, you'll have lots of brownies. Which is a good thing, and a terrible thing.
Just to amp it up a little more, some chocolate chunks for good measure.
Into a parchment paper lined 9x9 baking dish... try to smooth it as much as you can. It's not easy because it's a super thick batter.
Basically, 20 minutes later and this is what comes out.
Wanna know a secret? This is how I test my brownies to see if they are done. Fork- into the set up batter.
When the prongs come out like this- completely clean, you know that it's good to go. Let them set up for a bit, then cut 'em up.
The Best Brownies
1/2 cup butter, room temperature
1 cup sugar
1 teaspoon vanilla
2 eggs
1/2 cup cocoa powder
1/2 cup flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1/2 cup chocolate chunks

Preheat oven to 350 degrees. Line a 9x9 baking dish with parchment paper. In a large bowl, whip butter, sugar and vanilla together until light and fluffy. Add in eggs, one at a time, mixing well with each egg. Beat in flour and cocoa until well combined. Add in salt and baking soda with mixer as well. Stir in chocolate chunks. Pour batter into the lined baking dish and smooth until evenly spread. Bake in preheated oven for 20 minutes or until completely set and a tester fork comes out smooth. Let cool in pan for 10 minutes before slicing. Enjoy!
