baked stuffed pork chops

This may be Ed's favorite meal of all time. He loves a good pork chop. He probably loves a bad pork chop, too. He's never met a pork chop he didn't like, but a stuffed pork chop is his poison of choice. I get requests for stuffed pork chops basically every time I go grocery shopping.
You can buy pre-cubed bread if you would like, I just cube up some sliced bread that I have on hand.
Those cubed bits of bread go into a bowl. A large bowl.
To the bread add garlic, celery (with leaves) and onion. I've added apple, carrots, sun dried tomatoes- add whatever you'd like!
To this, add the seasoning. It'll be the same seasoning you put on the outside of the pork chop. I like mine to be smokey, salty, savory and spicy all at the same time so this spice blend is a mix of celery salt, black pepper, cayenne pepper, smoked paprika, onion powder and garlic powder.
Lastly, add just enough chicken stock to wet the mixture so that it stick together. Notice how chunky it is? That's how I like the stuffing, but you can make it finer by dicing everything a little smaller.
Now for the pork chops- nice thickly cut pork chops are what you need. You'll need to cut a little pocket into the pork chop, so prepare a very sharp knife. Pinch either side like you see above.
Make small slices in the pork chop with that sharp knife, not going completely to each and end not cutting all the way through to the other side. Keep making cuts and slices until you have a fairly deep pocket.
Just like this. From this point, stand the pork chops up and stuff 'em!
I like to fill mine to overflowing because I love the stuffing. Any that spills out onto the pan is just extra crispy and delicious.
Season either side of the pork chops with the same spice mix from the stuffing and pop them into the oven.
40 minutes later or so, this is what comes out- so delicious. I mean, they even LOOK good. All that's needed are some creamy mashed potatoes and you are good to go!
Baked Stuffed Pork Chops
2 large pork chops
2 cups bread cubes
2 celery stalks, chopped
1 small onion, chopped
2 cloves garlic, minced
1/3 cup chicken stock
1 teaspoon black pepper
1 teaspoon celery salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon cayenne pepper

Preheat oven to 350 degrees. In a small bowl, combine together pepper, celery salt, onion powder, garlic powder, smoked paprika and cayenne pepper. In a large bowl, combine together bread cubes, chopped celery, onion and minced garlic. Add in 1/2 the spice mixture to the bread cubes and moisten with chicken stock. Slice pork chops with a very sharp knife in the side to create a pocket. Stuff the bread mixture into the pocket and season the chops with the remaining spice blend. Place on a greased pan and cook in preheated oven for 40-50 minutes or until cooked through. Enjoy!
