oven baked el pastor

This was soooo goood! El pastor is like the ultimate fusion food- a cross between Middle Eastern shwarma and Mexican street vendor food. And who doesn't like pineapple?
I mushed my marinade up in a food processor, but you can use a blender or hand blender as well. But, it is important to use an instrument that will finely mince and slightly juice the onion and pineapple, so that it becomes pretty juicy.
You can use pork butt or chops like I did, but chose a cut of pork with a marbled quality but is still fairly lean.
Marinade in a bowl or a plastic bag for at least 4 hours or overnight.
Those little bits of onion, pineapple and chipotles will become caramelized and delicious in the oven and if you stir frequently enough, they won't burn.
While the pork is cooking, cook the pineapple- broil it even, if you can.
When the pork is cooked through, you serve it as is, but I add an additional step.
I pan fry the pork and pineapple in a saute pan in vegetable oil just to get a little extra crisp on it. Serve the pork on taco sized tortillas.
Oven Baked el Pastor

1 large white onion
1 20 oz. can chunk pineapple in own juices
1/2 cup orange juice
1/4 cup distilled white vinegar
1/8 cup chili powder
3 cloves garlic
2 teaspoons salt
1 teaspoon dried oregano
1 teaspoon cumin
1 chipotle in adobo
1 1/2 lbs pork lion or chop
Salt and pepper
Tomatillo salsa
Flour or corn taco sized tortillas

In a food processor or blender, combine the first 10 ingredients and mince to a fine pulp. Cut pork loin or pork chop into 1/2 inch chunks and marinate in the refrigerator for a minimum of 4 hours or overnight. Spray a cooking pan with non-stick spray and cook in a preheated 350 degree oven for 20-30 minutes, or until pork is fully cooked. Stir often to avoid burning. While pork is cooking, coat the remaining pineapple in oil, salt and pepper and cook in oven to caramelize. When pork is cooked through, add pineapple and serve with tomatillo salas on corn or flour tortillas. Enjoy!

Optional: When pork is finished cooking in the oven, pan fry in vegetable oil for 3-5 minutes over high heat to crisp further before serving. Enjoy!
